Ingredients:

3 cups Dried black beans
1/2 cup Olive oil
6 tbsp Fresh lime juice
1 tsp Salt

3 Navel oranges
2 Avocados

Instructions:

  1. Prepare the Beans:

    • Pick through dried beans, discarding any bad ones.
    • Rinse beans thoroughly.

    • Peel the oranges and section them.
    • Cut the orange sections into 1/2 inch pieces.

    • Add the cooked and cooled black beans to the bowl and gently stir to coat them evenly with the dressing.
