Instructions:

- Pick through dried beans, discarding any bad ones.
- Rinse beans thoroughly.
- Place beans in a large pot and add enough water to cover them by 2 inches.
- Bring to a boil, cook for two minutes, then turn off the heat.
- Let the beans soak in the covered pot for one hour.
- After soaking, bring the beans to a boil again, covered.
- Reduce heat and simmer for 30 minutes until beans are firm but not mushy.
- Drain beans and rinse with cold water. Dry them on a paper towel.
