Instructions:

Step Description
1 In a small bowl, whisk together the dark brown sugar, fish sauce, minced ginger, red pepper flakes, soy sauce, dry sherry, and minced garlic. Set aside.
2 Heat 1 teaspoon of oil in a wok over high heat until very hot. Add the chopped scallions and stir-fry for about 30 seconds to 1 minute, until they start to look golden. Remove from the wok and set aside.
3 In the same wok, heat the remaining oil. Stir-fry the chicken breasts until they are browned and almost cooked through, about 2-3 minutes.
4 Remove the chicken from the wok, pouring any juices over the chicken.
