Ingredients:

  • 1 1/4 cups crushed wafers
  • 3 tablespoons melted margarine or butter
  • 1/3 cup sugar
  • 1 packet unflavored gelatin
  • 1 cup eggnog
  • 3 egg yolks
  • 1/2 teaspoon ground nutmeg
  • 4 packages cream cheese, softened
  • 1/4 cup rum or milk
  • 2 tablespoons sugar (for egg whites)
  • 2 egg whites
  • 2 cups whipping cream
  • Shaved chocolate or wafer crumbs (for garnish)

Instructions:

  1. Prepare Crust:

    • In a small mixing bowl, combine the crushed wafers and melted margarine or butter. Toss until thoroughly combined.
    • Press the crumb mixture into the bottom and 1/2 inch up the sides of a 9-inch springform pan to form a firm, even crust.
    • Chill for about 1 hour or until firm.
  2. Prepare Filling:

    • In a medium saucepan, combine the sugar and gelatin.
    • Stir in the eggnog, egg yolks, and ground nutmeg.
    • Cook over medium heat, stirring constantly, until the mixture just comes to a boil.
    • Remove from heat.
    • In a large mixer bowl, beat the cream cheese with an electric mixer on medium speed for 30 seconds or until softened. Gradually beat in the gelatin mixture.
    • Stir in rum or milk.
    • Chill until partially set.
  3. Whip Egg Whites and Cream:

    • In a medium mixer bowl, beat the egg whites on medium speed of an electric mixer until soft peaks form (tips curl).
    • Add the remaining sugar, beating until stiff peaks form (tips stand straight).
    • In a small mixer bowl, beat the whipping cream until soft peaks form.
  4. Combine Filling:

    • Fold the whipped egg whites and whipped cream into the gelatin mixture until well combined.
  5. Assemble and Chill:

    • Turn the filling into the crumb-lined pan.
    • Cover and chill until firm, for several hours or overnight.
  6. Serve:

    • Before serving, loosen the sides of the cheesecake from the pan with a spatula and remove the sides.
    • Sprinkle shaved chocolate or wafer crumbs around the top edge of the cheesecake for a decorative touch.
