1-2 Green Pepper
3/4 Mozzarella Cheese
1/4 Finely Chopped Mushrooms (Stems)

Instructions:

  1. Set oven to Broil.
  2. Set oven rack to second highest position.
  3. Grease a baking dish (large enough to hold skins).
  4. Cut baked potatoes in half.
  5. Scoop out cooked potato, and reserve for another use.
  6. Arrange skins cut side up in baking dish.
  7. Rub skins all over lightly with olive oil.
  8. Brush each potato skin with 1 or 2 tablespoons of pizza sauce.
  9. Sprinkle with green pepper and finely chopped mushroom stems.
  10. Top each with grated mozzarella cheese.
  11. Broil in oven for 5-7 minutes, or until skins are crispy, and cheese is melted.
