Description:
These Blintsi are a light type of very thin pancake, deeply rooted in Russian culinary tradition for over 100 years. They offer a delicate texture and are perfect for a delightful breakfast experience.
Ingredients:
- 3 cups all-purpose flour
- 1 1/2 tsp salt
- 1 cup granulated sugar
- 3 eggs
- 2 tsp baking soda
- 1/2 cup butter, melted
- 3 cups milk
- 3 tsp baking powder
- 2 tbsp butter, for frying

Prepare the Batter:
- In a large bowl, pour the milk.
- Gradually add the flour, half a cup at a time, while mixing well with an electric mixer after each addition until the mixture is smooth and well blended.
- Add salt to the mixture and mix thoroughly.
- Incorporate the eggs one at a time, beating well after each addition.
- Stir in the granulated sugar and mix until combined.
- Pour in the melted butter (3 tablespoons) and mix until well incorporated.
- Dissolve the baking soda in about 1 tablespoon of milk, then add it to the batter and lightly beat again.
- Finally, add the baking powder and mix lightly until the batter is well blended.
- Allow the batter to rest for about 5 minutes before use. The consistency should resemble that of whipping cream.

- Preheat a 10-inch heavy-bottomed frying pan over medium-high heat.
- Before cooking each blintsi, rub the frying pan with vegetable oil.
- Pour about 1/2 cup of batter onto the frying pan and quickly spread it evenly by shaking the pan in a circular motion.
- Cook until the edges of the blintsi begin to lightly brown and curl, approximately 1 minute.
- Flip the blintsi over and cook for an additional 15 to 20 seconds.
- Adjust the heat as needed depending on the type of frying pan used.
- Once cooked, remove the blintsi from the pan, fold them in half, and lightly wipe them with melted butter.
