π½οΈ Recipe Yield: 12 Crab Cakes
Ingredients:
- 1/4 – 1/2 cup unsalted butter
- 4 eggs
- 6 tablespoons sour cream
- 1/4 cup fresh parsley leaves, finely chopped
- 2 tablespoons fresh lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 cups lump crabmeat, drained
- 2 cups bread crumbs
- Cornmeal (for sprinkling)
- Lemon wedges (for serving)
- Oil (for frying)
Instructions:
- In a large mixing bowl, whisk together the unsalted butter, eggs, sour cream, finely chopped parsley leaves, fresh lemon juice, Worcestershire sauce, paprika, salt, and cayenne pepper until well combined.
- Gently stir in the lump crabmeat and bread crumbs until evenly incorporated into the mixture.
- Form the crab cake mixture into twelve 3/4-inch-thick cakes, using approximately 1/2 cup of mixture for each cake.
- Sprinkle cornmeal on a baking sheet, then place the formed crab cakes on it. Sprinkle the remaining cornmeal over the tops of the crab cakes. Cover the baking sheet with plastic wrap and chill the crab cakes in the refrigerator for at least 1 hour, or overnight, to allow them to set.
- Heat oil in a large heavy skillet over moderate heat until hot but not smoking.
- Working in batches, carefully place the crab cakes in the skillet, being careful not to overcrowd them. Cook for 3 to 4 minutes on each side, or until golden brown and crispy.
- As the crab cakes cook, transfer them to a plate lined with paper towels to drain any excess oil.
- Keep the cooked crab cakes warm in a 200-degree Fahrenheit oven while you finish cooking the remaining batches.
- Once all the crab cakes are cooked, serve them hot with lemon wedges on the side.
- Optionally, serve with tartar sauce or your favorite dipping sauce.
