Description:
Indulge in the exotic flavors of Morocco with this vibrant and nutritious Moroccan Couscous Salad with Baby Corn. Bursting with the goodness of garbanzo beans, black beans, and aromatic spices, this salad is not only delicious but also packs a punch of health benefits. Perfect for a quick and easy meal, or as a refreshing side dish for any occasion!

Ingredients:

Quantity Ingredient
3 cups Couscous
2 tsp Salt
1/2 cup Garbanzo beans
1 tsp Black pepper
3/4 cup Black beans
1/4 tsp Allspice
1 1/2 cups Diced tomatoes
1 1/2 tsp Nutmeg
1 Green onion, chopped
1/2 cup Fresh parsley, chopped
1 Yellow onion, diced
1/2 clove Garlic, minced
4 tbsp Olive oil
1 cup Baby corn
2 Red wine vinegar

Instructions:

  1. Prepare Couscous:
In a large saucepan, bring 6 cups of water to a boil. Add couscous and a pinch of salt. Cover the saucepan, remove it from the heat, and let the couscous stand for 20 to 30 minutes, allowing it to absorb the water and fluff up. Once done, uncover and let it cool to room temperature.

  2. Make Vinaigrette:
For the vinaigrette, combine red wine vinegar, diced tomatoes, green onion, yellow onion, garlic, black pepper, allspice, nutmeg, and a pinch of salt in a food processor. While blending, drizzle in olive oil until the mixture emulsifies into a smooth dressing. Alternatively, finely chop the ingredients by hand and whisk them together in a bowl until well combined.

  3. Prepare Salad:
In a large mixing bowl, combine the cooked and cooled couscous with baby corn (halved), garbanzo beans, black beans, and chopped parsley. Pour the prepared vinaigrette over the salad mixture and toss gently to coat all the ingredients evenly.

  4. Chill:
Cover the bowl with plastic wrap or a lid and chill the Moroccan couscous salad in the refrigerator overnight, allowing the flavors to meld together and intensify.

  5. Serve:
Serve the chilled Moroccan Couscous Salad with Baby Corn as a refreshing side dish to complement any meal, or enjoy it as a satisfying standalone meal. For added freshness, accompany it with warm pita bread and crisp lettuce leaves.

Elevate your dining experience with this delightful Moroccan-inspired salad that’s bursting with flavors and textures. Packed with wholesome ingredients and aromatic spices, it’s a true celebration of vibrant Mediterranean cuisine!
