Ingredients:

Quantity Ingredient
2 cucumbers
2 tomatoes
1/2 red bell pepper
1 garlic clove
3 carrots
1/4 red onion
3 tablespoons fresh lemon juice
1 tablespoon olive oil
To taste salt
To taste pepper
To taste red pepper flakes
1 avocado
6 radishes
To taste cilantro
Optional yogurt
Optional sour cream
1/2 cup water

Instructions:

  1. Blend Ingredients: In a blender or very large food processor, puree the tomatoes, red bell pepper, garlic, carrots, lemon juice, spices, olive oil, 1/2 of the cucumber chunks, and 1/2 cup of water until smooth.

  2. Combine Ingredients: Pour the mixture into a large bowl or Tupperware container, then stir in the remainder of the diced cucumber.

  3. Chill: Cover the bowl or container and chill the gazpacho overnight or for at least three hours to allow the flavors to meld together.

  4. Serve: To serve, ladle the chilled gazpacho into bowls and garnish with diced onion, avocado slices, cilantro leaves, sliced radishes, or any other desired toppings. Optionally, you can add a dollop of yogurt or sour cream for extra creaminess.
