📝 Description: Yeast batter makes the best waffles. Most of the batter is made the night before so putting them together in the morning takes two minutes. Most of the prep time is waiting for the yeast to proof. These waffles are perfect for a sweet and delightful breakfast or brunch.

Ingredients:

Quantity Ingredient
1 packet active dry yeast
1/4 cup warm water
2 1/4 cups milk
10 tablespoons butter
1 teaspoon salt
1 tablespoon sugar
2 cups all-purpose flour
2 eggs
1/8 teaspoon baking soda

Instructions:

1. Prepare the Batter (Night Before):

  1. In a small bowl, proof the yeast in warm water for about 10 minutes, until foamy.
  2. In a large mixing bowl, combine the proofed yeast mixture with milk, melted butter, salt, and sugar.
  3. Gradually stir in the flour until smooth and well combined.
  4. Beat the mixture for about 1 minute until it’s smooth and slightly thick.
  5. Cover the bowl with plastic wrap and let it rest at room temperature overnight, or at least for 4 hours, to allow the batter to rise and develop flavor.

2. Make the Waffles (Morning):

  1. Preheat your waffle iron according to manufacturer’s instructions.
  2. Just before cooking, beat the eggs and baking soda into the batter until fully incorporated.
  3. Pour an appropriate amount of batter onto the preheated waffle iron.
  4. Close the waffle iron and cook until the waffles are golden brown and crisp.
  5. Carefully remove the waffles from the iron and serve immediately.

Recipe Notes:

  • These raised waffles are incredibly versatile and can be served with a variety of toppings such as maple syrup, fresh fruit, whipped cream, or even savory options like fried chicken for a unique twist.
  • To make the morning prep even faster, you can prepare the batter the night before and store it covered in the refrigerator, then simply beat in the eggs and baking soda in the morning before cooking.
  • If you don’t have a waffle iron, you can also use this batter to make delicious pancakes. Just cook them on a hot griddle until golden brown on both sides.
