Grits with Tomatoes and Shrimp Recipe 🍤

If you’ve never tried grits, this dish is a great introduction. It’s easy to make and quite delicious. Makes a great brunch, lunch or supper. 🌞

Ingredients:

2 cups milk | 1 small onion, finely chopped | 1/4 tsp salt |

1 cup grits | 2 bay leaves | |
1/4 cup heavy cream | 14 oz whole tomatoes, diced | |
2 tbsp grated Parmigiano-Reggiano cheese | 1/4 tsp cayenne pepper | |
1 tbsp fresh herbs, chopped | ||
Instructions:
For Grits:
- In a saucepan, bring water, milk, butter, and salt to a boil.
- Add grits to the boiling mixture, then reduce the heat to a simmer.
- Cook the grits, stirring frequently, for 15-20 minutes or until smooth, thick, and easily falls from a spoon.
- Stir in the heavy cream and grated Parmigiano-Reggiano cheese until well combined.
- Cover the grits tightly and set aside if needed.
For Tomatoes:
- While the grits are cooking, heat a skillet over medium heat and melt the butter.
- Saute the chopped onions and minced garlic in the melted butter until translucent, about 2-3 minutes.
- Add the white wine to the skillet and cook until the liquid has evaporated, about 2-3 minutes.
- Stir in the bay leaves, diced tomatoes (with their juices), and cayenne pepper.
- Reduce the heat to low and simmer the tomato mixture for 10 minutes, or until the tomatoes have broken down and the mixture has slightly thickened.
- Remove the skillet from the heat, stir in the chopped fresh herbs, and cover to keep warm.
For Shrimp:
- In a separate skillet, heat butter over medium-high heat.
- Season the peeled and deveined shrimp with salt and black pepper.
- Saute the seasoned shrimp in the hot butter until they are cooked through and pink, about 2-3 minutes per side.
To Serve:
- Spoon the creamy grits into serving bowls or plates.
- Ladle the tomato mixture over the grits.
- Arrange the cooked shrimp on top of the tomatoes.
- Garnish the dish with additional grated Parmigiano-Reggiano cheese, if desired.
- Serve immediately and enjoy the delicious combination of flavors!
