- Cut mushroom caps in half, and set aside.

Prepare Broth: - In a small non-aluminum saucepan, combine mushroom stems, chicken broth, and dry red wine.
- Bring to a boil, then reduce heat and simmer uncovered for 15 minutes or until reduced to 1 cup.
- Strain the mixture, reserve the cooking liquid, and set it aside. Discard the mushroom stems.

Prepare Chicken: - Sprinkle chicken thighs and drumsticks with salt and pepper, then set them aside.
