This is my rendition of the Kamush, a beloved appetizer from our favorite local Mexican restaurant, “La Chosa”. When it closed, I went into severe withdrawal until I crafted this recipe. The combination of refried beans, cheese, guacamole, and sour cream is a must for me, but feel free to personalize it to your liking. Perfect for a crowd, Superbowl parties, football games, or even breakfast! Prep and cook times are approximate, as personal preference and perhaps a few beers during preparation can affect timing.

Ingredients:
- 6 corn tortillas
- 1 cup refried beans
- 2 cups cheddar cheese, shredded
- 1 cup sour cream
- 1 large tomato, diced
- Tortilla chips (store-bought or homemade)
- Guacamole
- Jalapeno slices (for garnish)
Instructions:
Step | Description |

1 | If using fresh corn tortillas, cut each into 4 quarters. In a 10-inch skillet over medium-high heat, add about 1/4 inch of hot salad oil. Cook tortilla wedges, about 4 at a time, for 30 seconds. Use a slotted spoon to turn the chips and cook for an additional 30 seconds, or until golden and crisp. Remove and drain on paper towels, then place in a single layer on a large cookie sheet or several sheets. If using store-bought restaurant-style chips, place them in an even layer on the cookie sheet. |
2 | Heat refried beans in a saucepan until they’re nice and creamy. Spread about a tablespoon of beans onto each chip, then sprinkle with a dollop of shredded cheese. |
3 | Preheat your oven to 350ยฐF (175ยฐC). Place the cookie sheet with the prepared chips into the oven and bake until the cheese is melted and just beginning to get bubbly, approximately 10 minutes. Keep an eye on them to prevent burning. |
4 | Remove the chips from the oven and get creative with your decorations! Add a spoonful of guacamole on top of each chip, followed by a small dollop of sour cream. Garnish with diced tomatoes and a slice of jalapeno. Feel free to add habanero salsa for an extra kick. Remember, the toppings are flexible, so decorate to your taste preference. |
5 | If using store-bought chips, ensure they are large and flat. Be vigilant at the store to prevent the bag-packer from smushing your bag of chips! |
