Apple Cider Doughnuts (Not Fried)

Ingredients:

Quantity Ingredient
3 granulated sugar
2 1/2 cinnamon
2 all-purpose flour
1 1/2 baking powder
1 1/2 baking soda
1/4 salt
2 brown sugar
2/3 apple butter
1/2 pure maple syrup
1/3 apple cider
1/3 canola oil
1/3 vanilla extract
3 egg whites
1 yogurt

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).

  2. Prepare pans: Spray the molds of 2 mini bundt cake pans (6 cakes per pan) with nonstick cooking spray.

  3. Cinnamon Sugar Mixture: In a small bowl, combine the granulated sugar and 1/2 tsp cinnamon. Distribute this cinnamon/sugar mixture evenly amongst the cake pans. Shake out the excess onto a sheet of wax paper and return to the bowl for use at the end of the recipe.

  4. Dry Ingredients: In a larger bowl, combine the all-purpose flour, baking powder, baking soda, salt, and the remaining 2 tsp of cinnamon. Set aside.

  5. Wet Ingredients: In another large bowl, whisk together the egg whites, brown sugar, apple butter, pure maple syrup, apple cider, yogurt, canola oil, and vanilla extract.

  6. Combine Ingredients: Add the dry ingredients to the wet ingredients and stir just until moistened. Be careful not to overmix.

  7. Fill the Molds: Divide the batter among the prepared molds, adding approximately 2 heaping tablespoons of batter per mold.

  8. Sprinkle Cinnamon Sugar: Sprinkle the reserved cinnamon/sugar mixture on top of the batter in the molds.

  9. Bake: Place the pans in the preheated oven and bake for 10-12 minutes or until a wooden pick inserted in a doughnut comes out clean.

  10. Cool: Remove the pans from the oven and let the doughnuts cool for 2 minutes in the pan.

  11. Final Step: Loosen the doughnuts and place them on a cooling rack to cool completely before serving.
