  • 1 smoked ham hock

Instructions:

Step Description
1 In a 3-quart or larger electric slow cooker, combine potatoes, onion, ham hock, dill weed, lemon peel, white pepper, and chicken broth.
2 Cover and cook on low setting until the ham hock and potatoes are very tender when pierced, approximately 7 1/2 to 8 hours.
3 Lift out the ham hock and let it stand until cool enough to handle.
4 Meanwhile, remove about 1 cup of the potatoes with a little broth and blend until pureed. Return the puree to the slow cooker.
5 In a small bowl, mix cornstarch and cream until well blended, then stir into the potato mixture.
6 Increase the cooker’s heat setting to high.
7 Remove and discard any fat and bones from the ham hock, then tear the meat into bite-size pieces and stir into the soup.
8 Cover and cook on high, stirring occasionally, for an additional 20 minutes.
9 Garnish with fresh dill sprigs before serving, if desired.
