Description:

When our daughter decided to enter the ‘Kinderfest’ cooking competition in our hometown during Octoberfest, she was sure to win!!! Ah, but just a small glitch, her precious Black Forest Cake had shifted and was slightly lopsided!!! Ah, but she received a big reward from her parents, as we were so proud of our little girl’s achievement…

Ingredients:

  • 8 tablespoons sugar
  • 8 tablespoons warm water
  • 6 tablespoons cake flour
  • 1 tablespoon kirsch
  • 5 tablespoons cocoa powder
  • 3 tablespoons chopped almonds
  • 1 1/2 cups heavy whipping cream
  • 1 tablespoon butter
  • 1 1/2 cups maraschino cherries
  • 2 eggs, separated
  • Grated chocolate, for garnish

Instructions:

  1. Prepare Dry Ingredients: Sift the cocoa and the flour together and set aside.

  2. Beat Egg Yolks: In a mixing bowl, mix the egg yolks and the sugar together until the mixture becomes light in color.

  3. Add Warm Water: Gradually add the warm water to the egg yolk mixture, and mix well with an electric beater for about 5 minutes until well combined.

  4. Incorporate Dry Ingredients: Gently incorporate the cocoa/flour mixture into the egg yolk mixture using a spatula. Then, fold in the chopped almonds.

  5. Beat Egg Whites: In a separate clean bowl, beat the egg whites until they hold stiff peaks.

  6. Combine Batter: Fold the beaten egg whites into the batter gently until fully incorporated.

  7. Prepare Cake Mould: Butter and flour generously a 10-inch springform mould.

  8. Bake Cake: Pour the batter into the prepared mould and bake the cake in a preheated oven at 350°F (180°C) for 30-40 minutes or until a toothpick inserted into the center comes out clean.

  9. Cool Cake: Remove the cake from the oven and let it cool in the mould for 5 minutes. Then, unmold and let it cool for an additional 5 minutes on a wire rack.

  10. Slice Cake: Carefully cut the cooled cake into 3 layers lengthwise using a sharp knife.

  11. Assemble Layers: Spread some maraschino cherries and a layer of whipped cream on the bottom cake layer. Top with the second cake layer.

  12. Add More Cherries and Cream: Cover the second cake layer with more maraschino cherries and whipped cream. Then, place the third and final cake layer on top.

  13. Garnish: Garnish the top of the cake with the remaining whipped cream. Sprinkle with grated chocolate and decorate with maraschino cherries.
