Description:
One of the best Worcestershire Sauce recipes I have found yet. If sodium content is a concern, use a product such as Morton’s “Lite Salt” (50% lower sodium than salt) in place of the salt.

Ingredients:

2 Black pepper

3 Cups water
1 Cup distilled white vinegar

Instructions:

  1. Prepare Aromatic Base:

    • In a medium saucepan, heat olive oil over medium heat.
    • Add minced garlic, chopped onions, black pepper, and minced horseradish.
    • SautΓ© until translucent, for about 5 to 8 minutes.
  2. Combine Ingredients:

    • To the sautΓ©ed mixture, add all other ingredients: water, distilled white vinegar, molasses, dark corn syrup, anchovy fillet, cloves, salt, and lemon juice.
    • Stir well to combine all the ingredients.
  3. Simmer:

    • Bring the mixture to a gentle boil.
    • Reduce the heat to low and let it simmer for 1 hour, allowing the flavors to meld together.
  4. Strain and Store:

    • Once simmered, remove the saucepan from heat.
    • Strain the mixture through a double thickness of cheesecloth to remove any solids.
    • For optimal flavor development, store the Worcestershire sauce in a wooden cask, if available.
  5. Mature the Sauce:

    • To enhance the flavors, it is recommended to let the sauce mature in a cool, dark place for about a month before using.
    • This maturation process allows the flavors to deepen and meld, resulting in a more robust Worcestershire sauce.
