Ingredients:
- 1 lb bulk Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 tsp dried basil
- 1/2 tsp sugar
- 1 tsp salt
- 1/4 tsp black pepper
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup shredded provolone cheese
- 1/3 cup grated Parmesan cheese
- 1 egg
- 1/2 box manicotti noodles
Instructions:

Preheat oven: Preheat your oven to 350°F (175°C).

Prepare the filling: In a large skillet over medium heat, brown the Italian sausage, then drain the fat. Add diced onion and minced garlic, cooking until the onion becomes slightly transparent.

Create the sauce: Stir in the diced tomatoes, tomato paste, dried basil, sugar, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 15 minutes.

Prepare the cheese mixture: In a medium bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, provolone cheese, Parmesan cheese, and egg. Mix well until fully incorporated. Store the mixture covered in the refrigerator while you cook the manicotti noodles.

Cook the manicotti: Cook the manicotti noodles according to the package instructions, then drain them.

Stuff the manicotti shells: Using a spoon or piping bag, fill each manicotti shell with the cheese mixture.

Assemble the dish: Spread half of the tomato-based sauce on the bottom of a greased 13×9-inch baking dish. Place the stuffed manicotti shells over the sauce, then spoon the remaining sauce over the top.

Bake: Cover the baking dish with foil and bake for 35 minutes, or until the dish is hot and bubbly.

Add cheese topping: Remove the dish from the oven and sprinkle the remaining 1 cup of mozzarella cheese over the top. Return the dish to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
