Yield: Approximately 14 cups

Ingredients:

Quantity Ingredient
3 Bacon
1 Onion
2 tablespoons Butter
3 Garlic cloves
4 Sweet potatoes
8 cups Chicken broth
1/4 cup Pickled jalapeños
2 tsp Jalapeño juice
1/4 tsp Comino
1/2 cup Milk
1 1/2 tsp Salt
1 tsp Black pepper
1 Baking soda
1 handful Cilantro leaf

Instructions:

  1. In a large stockpot, melt the butter over medium heat. Add the bacon and onion, and sauté until they become tender and fragrant.

  2. Stir in the garlic and cook for an additional 2 minutes, allowing the flavors to meld.

  3. Add the sweet potatoes, chicken broth, pickled jalapeños, jalapeño juice, and comino to the pot. Stir well to combine all the ingredients.

  4. Cover the pot and allow the soup to simmer for approximately 20 to 30 minutes, or until the sweet potatoes are tender and easily pierced with a fork.

  5. Once the sweet potatoes are cooked, add the baking soda, milk, and cilantro to the pot.

  6. Using a potato masher, coarsely mash the sweet potatoes directly in the pot, leaving some texture for a rustic feel.

  7. Stir the soup well to incorporate all the ingredients evenly. Taste and adjust the seasoning with salt and black pepper according to your preference.

  8. Allow the soup to simmer gently for an additional 15 minutes, stirring frequently to prevent sticking or burning.

  9. Serve the Jalapeno Sweet Potato Soup hot, garnished with a dollop of sour cream and thinly sliced fresh jalapeños for an extra kick of heat and a pop of color.

Note: This soup pairs wonderfully with crusty bread or a simple green salad for a complete and satisfying meal. Enjoy the warmth and flavor of this delightful soup with family and friends during chilly evenings! 🍲🌶️
