  • 1 tablespoon cornflour
  • 1/4 cup water
  • 2 eggs, separated
  • 1 1/2 cups milk
  • 1/2 cup light coconut milk

  • 1 cup shredded coconut
  • 1 tablespoon butter or margarine
  • 1 teaspoon vanilla essence
  • 1 cup caster sugar
  • 1 tablespoon brown sugar

Instructions:

1. Preheat Oven:

Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).

2. Prepare Pineapple Layer:

  1. In a saucepan, combine the crushed pineapple and 1 tablespoon of cornflour.
  2. Bring the mixture to a boil, stirring constantly.
  3. Let it cook for 1 minute, then remove it from the heat.
