Grandmother Johansen’s Buttermilk Biscuits

Description:
An excellent recipe passed down through generations, tried and true. Despite its origins, it’s not difficult to make, and I often find myself doubling the recipe to share the joy. While my grandmother used to make her own buttermilk, I’ve simplified the process for modern kitchens. Every time I make these biscuits, I receive big compliments, and I can’t help but think Grandma Johansen would have been proud to see her recipe cherished across the globe, even all the way from Denmark. By the way, she would have been 105 years old today.

Ingredients:
Quantity | Ingredient |
---|---|
2 cups | All-purpose flour |
1 cup | Whole wheat flour |
1 1/2 tsp | Salt |
8 tsp | Baking powder |
1/2 cup | Sugar |
3 tbsp | Shortening |
1 cup | Buttermilk |
Instructions:
-
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
-
Stir together all the dry ingredients in a large mixing bowl.
-
Add the shortening or lard to the dry ingredients, and mix until the mixture becomes crumbly.
-
Gradually add the buttermilk to the mixture, stirring carefully until all the dry ingredients are moistened. Be cautious not to overmix.
-
Flour your hands, and gently mix the dough 8 to 10 times until it forms a ball. Avoid overhandling the dough as it can make the biscuits tough.
-
Roll out the dough on a floured surface to a thickness of about 3/4 inch to 1 1/2 inches.
-
Cut the dough into desired shapes using a biscuit cutter or a sharp knife, and then gently press the pieces together in a well-greased baking pan.
-
Place the pan in the preheated oven, and immediately reduce the temperature to 375 degrees Fahrenheit (190 degrees Celsius) or 350 degrees Fahrenheit (175 degrees Celsius) if your oven runs hot.
-
Bake the biscuits for 25 to 35 minutes or until they turn golden brown on top.
-
Optional: For an extra touch of flavor and richness, you can brush the freshly baked biscuits with melted butter.
-
