Knead to a smooth ball and let stand: Turn the dough out onto a lightly floured surface and knead it until it forms a smooth ball. Cover the dough with plastic wrap and let it rest for 20 minutes to allow the gluten to relax.

Fold rounds in half; seal and crimp edges: Carefully fold each round of dough in half to encase the filling, then use a fork to seal and crimp the edges firmly.

Fry in oil until golden brown: Heat oil in a deep fryer or large skillet to 350°F (175°C). Fry the pastechis in batches until they are golden brown on both sides, about 3-4 minutes per side.

Drain on paper towels: Once fried, transfer the pastechis to a plate lined with paper towels to drain off any excess oil.
