Ingredients:
- 2 onions
- 6 garlic cloves
- 2 tbsp olive oil
- 1/2 tsp salt
- 1 celery stalk, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 fresh chili pepper, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp ground cumin
- 2 cups water
- 1/2 cup tomatoes, diced
- 2 cans black-eyed peas, drained and rinsed
- 1 can black beans, drained and rinsed
- 1/4 cup barbecue sauce
- Salt, to taste
- Crushed tortilla chips, for garnish
- Sour cream, for garnish
Instructions:
- In a soup pot, combine the onions and garlic with the olive oil and salt.
- Cover and cook over medium heat for 8-10 minutes, or until the onions are soft and translucent, stirring occasionally.
- Add the celery, red bell pepper, green bell pepper, fresh chili pepper, dried oregano, dried thyme, ground cumin, and black pepper. SautΓ© for 10 minutes, stirring often.
- Pour in the water and add the diced tomatoes. Cover and simmer until the vegetables are tender, about 10-15 minutes.
- Stir in the drained black-eyed peas, black beans, and barbecue sauce. Mix well, cover, and simmer for an additional 10 minutes.
- Season with salt to taste.
- Serve hot, garnished with crushed tortilla chips and a dollop of sour cream if desired.
