Ingredients:

  • 2 onions
  • 6 garlic cloves
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1 celery stalk, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 fresh chili pepper, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp ground cumin
  • 2 cups water
  • 1/2 cup tomatoes, diced
  • 2 cans black-eyed peas, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1/4 cup barbecue sauce
  • Salt, to taste
  • Crushed tortilla chips, for garnish
  • Sour cream, for garnish

Instructions:

  1. In a soup pot, combine the onions and garlic with the olive oil and salt.
  2. Cover and cook over medium heat for 8-10 minutes, or until the onions are soft and translucent, stirring occasionally.
  3. Add the celery, red bell pepper, green bell pepper, fresh chili pepper, dried oregano, dried thyme, ground cumin, and black pepper. SautΓ© for 10 minutes, stirring often.
  4. Pour in the water and add the diced tomatoes. Cover and simmer until the vegetables are tender, about 10-15 minutes.
  5. Stir in the drained black-eyed peas, black beans, and barbecue sauce. Mix well, cover, and simmer for an additional 10 minutes.
  6. Season with salt to taste.
  7. Serve hot, garnished with crushed tortilla chips and a dollop of sour cream if desired.
