For a healthier option, you can use Bragg, a low-sodium soy sauce available in health food stores and some grocery stores.

Ingredients:

  • 1 cup mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 1/2 tablespoon garlic, minced
  • 2 teaspoons ginger, minced
  • 2 teaspoons sambal oelek
  • 1 1/2 cups cabbage, shredded
  • 1 1/2 cups leeks, sliced
  • 2 stalks celery, sliced
  • 1/2 cup low-sodium soy sauce or Bragg
  • 2 orange sweet bell peppers, thinly sliced
  • 1/4 cup vodka or chicken stock
  • Salt and pepper, to taste

Instructions:

1 Heat a wok or large frypan over medium-high heat and lightly spray it with oil.
2 Add sliced mushrooms and onion to the pan and sautΓ© for about 3 minutes, until they start to soften and brown.
3 Stir in minced garlic, ginger, and sambal oelek, allowing the flavors to meld for about 30 seconds.
4 Toss in the shredded cabbage and sliced leeks, stirring continuously, and cook for approximately 3 minutes until they begin to wilt.
5 Pour in the low-sodium soy sauce or Bragg, ensuring it coats all the vegetables evenly. Continue to stir.
6 Add the sliced sweet bell peppers to the wok, mixing them in well with the other vegetables. Cook for an additional 2 minutes, stirring occasionally to ensure even cooking.
7 Season the stir fry with salt and pepper according to your taste preferences.
8 Optionally, pour in the vodka or chicken stock, cover the wok, and let it simmer for 1 minute to allow the flavors to meld further.
9 Once everything is cooked to your desired tenderness, remove the wok from the heat. Serve the stir fry hot as a standalone dish or alongside your favorite protein. Enjoy!
