Servings: 10 scones

Ingredients:

Quantity Ingredient
1 cup All-purpose flour
2 tsp Baking powder
1/2 tsp Salt
1 tbsp Sugar
1/4 cup Butter, melted
1 cup Mashed sweet potatoes
Honey

Instructions:

  1. Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and grease a baking sheet; set it aside for later.

  2. Mix Dry Ingredients: In a medium-sized bowl, sift together the all-purpose flour, baking powder, salt, and sugar. Stir well to combine.

  3. Prepare Sweet Potato Mixture: In a large bowl, thoroughly mix the mashed sweet potatoes and 1 1/2 tablespoons of melted butter using a fork until well combined.

  4. Incorporate Dry Ingredients: Gradually add the dry ingredients mixture to the sweet potato mixture, stirring until a soft dough forms.

  5. Roll Out Dough: Turn the dough out onto a floured surface. Use a floured rolling pin or your hands to gently roll or pat the dough into a round shape, about 1/2-inch thick.

  6. Cut Scones: Use a 2-inch fluted or plain cookie cutter to cut the dough into rounds. Place the rounds on the prepared baking sheet, leaving about 1 to 1 1/2 inches of space between each scone.

  7. Brush with Butter: Brush the tops of the scones with the remaining melted butter.

  8. Bake: Transfer the baking sheet to the preheated oven and bake the scones for 15-18 minutes, or until they are light brown in color.

  9. Serve: Once baked, remove the scones from the oven and allow them to cool slightly. Serve warm with butter and honey.

  10. Enjoy: These sweet potato scones are best enjoyed fresh out of the oven, with their delightful aroma and warm, buttery texture.

  11. Storage: Store any leftover scones in an airtight container at room temperature for up to 2 days, or freeze them for longer storage.

  12. Reheating: To reheat, simply warm the scones in a microwave or oven until heated through. Serve and enjoy the deliciousness all over again! 🍠🥐
