  • Prep Time: 45 minutes
  • Cook Time: 8 hours
  • Total Time: 8 hours and 45 minutes
  • Servings: 8
  • Cuisine: Mexican
  • Keywords: Mexican, Weeknight

Ingredients:

  • 8 arbol chiles
  • 6 dried ancho chiles
  • 6 chipotle chiles
  • 4 cups boiling water
  • 3 slices bacon
  • 4 lbs sirloin steak, cut into chunks
  • 8 cloves garlic, minced
  • 1 onion, diced
  • 1 tbsp Mexican oregano
  • 1 tbsp oregano
  • 1 tbsp ground cumin
  • 1 1/2 tsp salt
  • 1 cup fresh cilantro, chopped
  • 1/4 cup bacon fat

Instructions:

  1. Prepare Chiles: Begin by preparing the chiles. Remove the stems and seeds, then snip them into pieces using scissors. Place them in a medium glass bowl.

  2. Soak Chiles: Pour the boiling water over the chiles in the bowl, ensuring they are fully submerged. Cover the bowl with a plate and let them soak for 30 minutes to soften.

  3. Brown Bacon: In a large skillet over medium heat, cook the bacon until it’s crispy. Once done, remove the bacon from the skillet and set it aside.

  4. Brown Sirloin: In the same skillet with the bacon fat, add the chunks of sirloin steak. Brown the meat on both sides until it develops a golden crust.

  5. Transfer to Crockpot: Transfer the browned bacon and sirloin steak to a crockpot or slow cooker.

  6. Prepare Chili Sauce: In a food processor, combine the soaked chiles along with the soaking water. Blend until smooth. You can strain the mixture for a smoother texture if desired.

  7. Add Ingredients to Crockpot: Pour the chile puree over the meat in the crockpot. Add minced garlic, diced onion, Mexican oregano, regular oregano, ground cumin, salt, and chopped cilantro. Also, add around 1/4 cup of the reserved bacon fat for extra flavor.

  8. Cook: Cover the crockpot and cook on high for 1 1/2 hours to allow the flavors to meld together. Then, reduce the heat to low and continue cooking for an additional 5 1/2 hours.

  9. Add Cilantro: After the initial cooking time, stir in the fresh cilantro and continue cooking on low for another 30 minutes.

  10. Serve: Once the chili is done, it should be rich and flavorful, with the meat falling apart tenderly. Ladle it into bowls and serve hot, accompanied by your choice of hot cornbread or cheesy beer muffins.
