Recipe: Dad’s Fudge

Description:
Years ago, possibly before the birth of the individual sharing this recipe, their dad took it upon himself to create the ultimate fudge recipe, combining all his favorite features. This recipe is a response to a request, crafted meticulously to ensure clarity for those unfamiliar with the process. Initially considering using a candy thermometer, the author ultimately opted for the traditional ‘cold water test’ method, a technique passed down through generations. Cook time excludes nut toasting and approximates the fudge boiling duration. This delightful treat, beloved by the menfolk of the family, can also double as a scrumptious fudge frosting if cooked for a shorter duration.

Ingredients:

  • 1 1/2 cups sugar
  • 3/4 teaspoon salt
  • 6 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/2 cup cocoa
  • 18-20 whole nuts (optional, for garnish)

Instructions:

  1. Before diving into the fudge-making process, ensure you have an 8-inch square or round baking dish greased with butter (avoid using non-stick cooking spray).

  2. Have a handheld electric mixer ready for use.

  3. Measure out the butter, vanilla, and nuts (if using) in advance.

  4. If including nuts in your fudge, toast them in the oven at 350°F for 10 minutes, remembering to shake them after the initial 5 minutes. Once toasted, set them aside to cool.

  5. In a 4-quart heavy-bottom saucepan (such as aluminum-clad or copper-clad stainless steel), combine the sugar, cocoa, and salt.

Note: If your saucepan is smaller, consider reducing the recipe to prevent boiling over.

  6. Mix the dry ingredients in the saucepan, then add the milk, stirring until well combined.

  7. Over medium-high heat, bring the mixture to a rolling boil, stirring constantly with a wooden spoon.

Note: If the mixture starts to splatter, reduce the heat slightly.

  8. Boil the mixture until it forms a soft ball when tested in cold water.

  9. Remove the saucepan from heat and immediately add the butter, vanilla, and toasted nuts (if desired).

  10. Using a handheld electric mixer on high speed, beat the fudge until it begins to stiffen.

  11. Quickly transfer the fudge into the prepared, buttered pan, scraping the sides of the saucepan to ensure you get every last bit, and spread it evenly.

  12. The fudge will lose its glossy appearance during this step.

  13. While the fudge is still warm, cut it into your desired serving sizes.

  14. Optionally, garnish each serving with a whole nut if desired.

  15. Attention: If the fudge begins to stiffen and loses its gloss simultaneously, it may have been overcooked. Fear not! Simply return it to the saucepan, add an additional tablespoon of butter and 2 tablespoons of milk, and melt until smooth over medium heat. Though the texture may be somewhat sugary, the fudge will still be edible.
