Description: 🍋 Very rich with the tang of lemon. Beautiful combination of flavors. I have also used the microwave instead of a double boiler to melt the chocolate and it works just fine. You can also drizzle melted chocolate over top if desired for even more chocolate punch!

Instructions
-
Melt Chocolate and Butter:
- Begin by melting 13 oz of semi-sweet chocolate and unsalted butter together in a double boiler until smooth and fully combined. Alternatively, you can use a microwave-safe bowl and melt them together in the microwave, stirring at intervals until smooth.
-
Prepare the Base:
- Remove the melted chocolate and butter mixture from heat and set it aside.
- In a mixing bowl, combine 1/4 cup of cream cheese, 8 tablespoons of sugar, and 1 3/4 eggs. Beat the mixture until well combined and smooth.
-
Incorporate Dry Ingredients:
- Add 3 teaspoons of vanilla extract, 2 cups of flour, 1 1/2 teaspoons of baking powder, and 3/4 teaspoon of salt to the cream cheese mixture. Mix until all the dry ingredients are fully incorporated.
-
Add Melted Chocolate:
- Slowly pour the melted chocolate and butter mixture into the bowl with the other ingredients. Mix thoroughly until the batter is smooth and uniform in texture.
-
Prepare the Lemon Layer:
- Pour the chocolate batter into a greased 9×12-inch baking pan, spreading it evenly to form the base layer.
-
Prepare Lemon Mousse:
- In another mixing bowl, beat together 1/2 cup of cream cheese, 3 tablespoons of lemon juice, and 1/3 cup of sugar until creamy and smooth.
- Gradually add in 1/4 egg at a time, continuing to beat the mixture until all the eggs are well incorporated and the lemon mousse is smooth.
-
Layer Lemon Mousse:
- Once the lemon mousse is ready, pour it evenly over the chocolate base layer in the baking pan.
-
Melt Chocolate for Drizzling:
- Using a double boiler, melt 6 oz of semi-sweet chocolate along with 2/3 cup of heavy cream until smooth and fully melted, stirring constantly.
-
Drizzle Chocolate:
- Carefully drizzle the melted chocolate over the top of the lemon mousse layer in the baking pan, creating a decorative pattern.
-
Bake:
- Preheat your oven to 350°F (175°C).
- Place the assembled brownie pan into the preheated oven and bake for approximately 45 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs.
- Remove the brownies from the oven and allow them to cool completely.
-
Chill:
- Once cooled, transfer the brownies to the refrigerator and chill for at least an hour before serving. This will help set the layers and enhance the flavors.
-
Serve and Enjoy:
- Once chilled, cut the lemon mousse chocolate brownies into squares and serve. Each bite will be a delightful combination of rich chocolate, tangy lemon, and creamy mousse, sure to please any dessert lover!
