Ingredients:

Quantity Ingredient
2 tbsp Olive oil
2 3/4 Onions
4 cloves Garlic
2 Bay leaves
5 cups Beef broth
1 can (14.5 oz) Diced tomatoes
1 cup Chunky salsa
1/2 cup Fresh cilantro, chopped
1 lb Lean ground beef
1 lb Bulk pork sausage
1 cup Yellow cornmeal
1 Egg
1/4 tsp Salt
1/2 tsp Ground black pepper
1/2 tsp Ground cumin
1/4 cup Long grain rice

Instructions:

  1. Heat olive oil in a heavy large pot over medium-high heat.

  2. Add 1 3/4 cups of chopped onions, 2 cloves of minced garlic, and bay leaves to the pot. Saute for about 5 minutes until onions are translucent and fragrant.

  3. Pour in beef broth, diced tomatoes with their juices, chunky salsa, and chopped cilantro. Bring the mixture to a boil.

  4. Once boiling, cover the pot and reduce the heat to simmer. Allow it to cook for 15 minutes, allowing the flavors to meld together.

  5. In a separate medium-sized bowl, combine the lean ground beef, bulk pork sausage, yellow cornmeal, egg, salt, black pepper, ground cumin, remaining 1 cup of chopped onions, 2 cloves of minced garlic, and 1/4 cup of chopped cilantro. Mix well until all ingredients are fully incorporated.

  6. Shape the meat mixture into generous tablespoon-sized balls, roughly 1 to 1 1/4 inches in diameter.

  7. Add the rice and meatballs to the simmering soup mixture. Stir occasionally and bring it back to a boil.

  8. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently until the rice and meatballs are cooked through and tender, stirring occasionally. This typically takes about 20 minutes.

  9. Season the soup with additional salt and pepper to taste, if desired.

  10. Serve hot, garnished with extra cilantro if desired. Don’t forget to have some hot sauce on the side for those who like a bit of extra heat!

Enjoy this comforting and flavorful Mexican Meatball Soup with your family and friends. It’s a satisfying meal that’s sure to become a staple in your recipe collection! 🍲🌶️
