- 1 packet unflavored gelatin
- 1/2 cup water
- 1/3 cup chopped green onions
- 1/2 cup chopped chives
- 1 cup chopped fresh dill
- 1/2 cup lemon juice
- 1/2 teaspoon salt
- 1 teaspoon sugar
- Hot pepper sauce, to taste
- 1 tablespoon tomato paste
- 2 cups low-fat plain yogurt
- 3/4 cup light sour cream
- 1/2 cup chopped celery
- 1 3/4 cups baby shrimp
- Dill sprigs, for garnish
Instructions:
Step | Description |
---|---|
1 | In a microwave-safe bowl or small saucepan, sprinkle gelatin over cold water, and let it stand until softened, about 5 minutes. |
2 | Microwave at high (100% power) for 40 seconds or warm over medium heat until the gelatin is dissolved. Let it cool slightly. |
3 | In a large mixing bowl, combine chopped green onions, chives, fresh dill, lemon juice, salt, sugar, hot pepper sauce, tomato paste, yogurt, sour cream, celery, and the dissolved gelatin. Mix well until thoroughly combined. |
4 | Stir in the baby shrimp and refrigerate the mixture until it begins to set. |
5 | Spoon the mixture into a lightly oiled 4-cup mold or alternatively, into a serving bowl. |
6 | Cover the mold or bowl and refrigerate until firm, for at least 3 hours. |
7 | To unmold the mousse, run a knife around the edges to loosen it from the mold. |
8 | Invert the mold onto a serving platter and cover with a hot, damp tea towel for 1 minute. |
9 | Hold the mold and platter securely and give a strong shake to release the mousse. |
10 | Carefully remove the mold, and garnish the mousse with dill sprigs before serving. |
