Ingredients:
- 2 egg whites
- 1/4 tsp cream of tartar
- 1/8 tsp salt
- 1/2 cup Splenda sugar substitute
- 1/2 tsp vanilla extract
Instructions:
- Preheat oven to 300 degrees Fahrenheit (150 degrees Celsius).
- Prepare a cookie sheet by spraying it with cooking spray; set aside.
- In a very clean bowl, combine egg whites, cream of tartar, and salt.
- Beat the mixture until foamy using an electric mixer or stand mixer.
- Gradually add Splenda, a little at a time, while continuing to beat the egg whites until they are stiff and glossy.
- Gently fold in vanilla extract until well incorporated.
- Spoon the meringue mixture onto the prepared cookie sheet, forming 13 extra-large meringues.
- Bake in the preheated oven for 18-20 minutes, or until the meringues are set and lightly golden.
- Variations:
- For chocolate meringues, fold in 1-2 tablespoons of cocoa powder along with the vanilla extract.
- Experiment with different extracts instead of or in addition to vanilla for unique flavor combinations.
- Add food coloring along with extracts to create vibrant and colorful meringues (e.g., swirl red coloring with peppermint extract for festive treats).
Tips:
- Ensure that the bowl and beaters are completely clean and free of any grease or residue before beating the egg whites to ensure proper volume and stability.
- Use room temperature egg whites for easier whipping and better volume.
- Store leftover meringues in an airtight container at room temperature for up to a week.
