Ingredients:

  • 1 boneless, skinless chicken breast
  • 1 can crushed tomatoes
  • 2 cups chicken broth
  • 3 cans black beans
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 onion
  • Juice of 1 lemon
  • 1 tablespoon margarine
  • Seasoned salt
  • 1 bay leaf
  • 1 teaspoon tarragon
  • 1 teaspoon oregano
  • Pinch of cinnamon

Instructions:

Step Description
1 In a medium-sized skillet, cook the chicken seasoned with seasoned salt until it’s fully cooked and no longer pink. Dice the chicken and set it aside.
2 Finely chop the green and red bell peppers, onion, and jalapeño slices, either using a food processor or chopping by hand for larger pieces. Combine all the peppers, onion, and jalapeño in a bowl and add lemon juice and a pinch of salt.
3 Melt margarine in a large stock pot. Sauté the pepper and onion mixture until it becomes soft and translucent.
4 Add the can of crushed tomatoes to the pot, stirring well to combine.
5 Pour in the three cans of black beans, making sure not to drain them.
6 Carefully add the cooked chicken to the pot, followed by the chicken broth. Stir everything together gently.
7 Season the soup with a bay leaf, about a teaspoon of seasoned salt, tarragon, oregano, and a pinch of cinnamon.
8 Allow the soup to simmer gently until the flavors meld together and the peppers and onions become tender, approximately one hour.
9 Serve piping hot and garnish with your favorite toppings, if desired. Enjoy with your preferred accompaniments.
