This is a fantastic Pesto recipe, one that I make all the time. I usually make lots, and store in my freezer in icecube containers, so I have it ready to add to pasta recipes. When added to any tomato sauce, it seems to always taste better.

Ingredients:

  • 1/2 cup sun-dried tomatoes
  • 3 cups fresh basil leaves
  • 3-4 cloves fresh garlic
  • 1/2 cup grated parmesan cheese
  • 1/2 cup romano cheese
  • 1/2 cup pine nuts
  • 1/2 cup walnuts
  • 1/2 cup olive oil, divided
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. In a food processor or blender, blend the sun-dried tomatoes, basil leaves, and fresh garlic until finely chopped.
  2. Add the grated parmesan cheese, romano cheese, pine nuts, and walnuts to the blender. Pour in 1/4 cup of olive oil. Blend until the mixture is well combined and forms a thick paste.
  3. Gradually add the remaining 1/4 cup of olive oil while blending until the pesto reaches your desired consistency.
  4. Season with salt and black pepper to taste. Blend once more to incorporate the seasoning evenly into the pesto.
  5. Store the pesto in the refrigerator in an airtight container for immediate use, or portion it into ice cube containers and freeze for future use.
  6. To use, simply thaw the desired amount of pesto and mix it into your favorite pasta dishes for an extra burst of flavor.
