Ingredients:
- 1 1/2 cups fat-free ricotta cheese
- 1 cup low-fat milk
- 2 eggs
- 2 egg whites
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 2 slices of bread
- 1/4 cup lemon juice
- 1 tablespoon cornstarch
- Water
Instructions:

1 | Preheat oven to 375 degrees Fahrenheit. |
2 | Coat 4 1-cup baking cups with nonstick cooking spray. |
3 | Combine ricotta cheese, low-fat milk, eggs, egg whites, 2 tablespoons of lemon juice, vanilla extract, bread slices, and brown sugar in a food processor. |
4 | Blend until smooth. |
5 | Pour the mixture into the prepared baking cups. |
6 | Place the baking cups in a larger baking dish filled with 1 inch of simmering water. |
7 | Bake for 40-45 minutes or until a knife inserted in the center comes out clean. |
8 | Remove from the oven, allow to cool, then chill in the refrigerator. |
9 | For the Cherry Sauce: In a small saucepan, combine cherries, preserves, and 1/4 cup of lemon juice. |
10 | Mix cornstarch with water and add to the cherries. |
11 | Bring to a boil and cook for 1 minute, stirring continuously. |
12 | Cool the sauce and chill it in the refrigerator. |
13 | Serve the chilled Cherry Sauce over the custards. |
