2 Eggs

3/4 cup Pumpkin, mashed
3/4 cup Pecans, chopped
3/4 cup Chocolate chips or morsels

Instructions:

  1. In a mixing bowl, cream together the softened butter and sugar until well combined.

  2. Beat the eggs in another bowl until they are well beaten, then add them to the creamed mixture and mix thoroughly.

  3. In a separate bowl, sift together the flour, baking soda, cinnamon, nutmeg, salt, ginger, and cloves.

  4. Gradually add the flour mixture to the creamed mixture, alternating with the mashed pumpkin, until all ingredients are well incorporated.

  5. Stir in the chocolate chips or morsels along with 1/2 cup of the chopped pecans.

  6. Grease and flour a 9×5 inch baking pan, then spoon the batter into it, spreading it evenly.

  7. Sprinkle the remaining chopped pecans on top of the batter.
