Blueberry Oatmeal Muffins Recipe

I got this delightful recipe from the blueberry u-pick farm that my family frequents every summer. There’s truly nothing quite like sinking your teeth into a warm, freshly baked blueberry muffin bursting with juicy berries.

Ingredients

Quantity Ingredient
1 1/4 cups Quick oatmeal
1 1/4 cups Old-fashioned oatmeal
1/3 cup All-purpose flour
1 cup Sugar
1/2 tsp Baking powder
1 tsp Salt
1 cup Milk
1 large Egg
1/4 cup Vegetable oil
3/4 cup Fresh blueberries
2 cups Frozen blueberries
1/4 cup Sugar
2 tsp Ground cinnamon

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.

  2. Combine the quick oatmeal, old-fashioned oatmeal, flour, 1 cup of sugar, baking powder, and salt in a mixing bowl.

  3. In another bowl, whisk together the milk, egg, and vegetable oil until well combined.

  4. Add the liquid ingredients to the dry ingredients, mixing until just moistened. Be careful not to overmix; a few lumps are okay. 🥣

  5. Gently fold in the fresh and frozen blueberries into the batter.

  6. Grease your muffin tin or line it with paper liners.

  7. Fill each muffin cup about 2/3 full with the batter.

  8. In a small bowl, mix together the remaining 1/4 cup of sugar and cinnamon for the topping.

  9. Sprinkle the cinnamon-sugar mixture over the muffin batter in each cup. 🧁

  10. Bake in the preheated oven for 20 to 25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

  11. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
