Ingredients:
- 2 lbs boneless beef chuck roast
- 2 onions, chopped
- 3 stalks celery, diced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 cup fresh mushrooms, sliced
- 2 cloves garlic, minced
- 4 tbsp olive oil
- 3 tbsp chili powder
- 2 tbsp ground cumin
- 2 tsp dried oregano
- 2 tsp paprika
- 1 tsp ground turmeric
- 1 tsp salt
- 1/2 tsp ground cardamom
- 1/2 – 1 tsp black pepper (to taste)
- 1/2 cup molasses
- 1 cup Burgundy wine
- 1 can (28 oz) whole tomatoes, undrained
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) garbanzo beans, drained and rinsed
- Shredded cheddar cheese, for topping
Instructions:
-
Preparation:
- Start by gathering all the ingredients and preparing them as instructed. Chop the onions, celery, bell peppers, and mushrooms. Mince the garlic. Slice the beef chuck roast into bite-sized pieces.
-
Cooking:
- In a large pot, heat the olive oil over medium-high heat.
- Add the chopped onions, celery, bell peppers, mushrooms, and minced garlic to the pot. Cook and stir continuously until the vegetables are softened and aromatic.
- Add the beef chuck roast to the pot and cook until browned, stirring occasionally.
- Drain any excess fat from the pot and return the mixture to the heat.
-
Seasoning:
- Stir in the chili powder, ground cumin, dried oregano, paprika, ground turmeric, salt, ground cardamom, and black pepper. Mix well to coat the meat and vegetables evenly with the spices.
-
Adding Liquids:
- Pour in the molasses and Burgundy wine, stirring to combine. Allow the mixture to come to a gentle boil.
-
Simmering:
- Once boiling, reduce the heat to low and cover the pot. Let the chili simmer for 1 1/2 hours, stirring occasionally to prevent sticking and ensure even cooking.
-
Final Touch:
- After simmering, add the whole tomatoes (undrained) to the pot, breaking them apart with a spoon. Stir in the kidney beans and garbanzo beans.
-
Serving:
- Serve the bodacious chili hot, garnished with shredded cheddar cheese for extra flavor and indulgence.
