Instructions:
- In a pot, melt 1/4 cup of unsalted butter over medium heat.
- Add finely diced carrots, onions, celery, and thinly sliced broccoli stems to the pot. Sauté for approximately 5 minutes, until the vegetables are softened.
- Stir in dried thyme, dried oregano, and dried sweet basil leaves. Continue to sauté for an additional 5 minutes to allow the flavors to meld.
- Pour in the dry white wine to deglaze the pan, scraping up any browned bits from the bottom.
- Add hot chicken stock to the pot, enough to cover the vegetables, and let it simmer until reduced by one-third.
- Stir in Worcestershire sauce, Tabasco sauce, smoked chicken (see instructions below), black beans, and broccoli florets. Simmer for another 5 minutes to allow the flavors to combine.
- Pour in the heavy cream and simmer for an additional 5 minutes, stirring occasionally.
- Season the soup to taste and thicken with cornstarch if desired.
- Gradually add the remaining butter, piece by piece, stirring until melted and fully incorporated.
- Serve the black bean soup immediately, garnished with your favorite toppings if desired.
Additional Notes:
- Smoked Chicken: To prepare the smoked chicken, preheat a covered grill with applewood chips until slightly smoking. Cook boneless chicken breasts to medium-rare, about 30 minutes. Ensure the grill is not too hot to prevent overcooking.
