Ingredients:

Quantity Ingredient
1/2 unsalted butter
1/2 carrot
1/2 onion
1/2 celery
1 broccoli stem
2 dried thyme
2 dried oregano
1 dried sweet basil leaves
1/4 dry white wine
4 Worcestershire sauce
1 Tabasco sauce
1/2 black beans
1 broccoli floret
1 heavy cream
1 cornstarch

Instructions:

  1. In a pot, melt 1/4 cup of unsalted butter over medium heat.
  2. Add finely diced carrots, onions, celery, and thinly sliced broccoli stems to the pot. Sauté for approximately 5 minutes, until the vegetables are softened.
  3. Stir in dried thyme, dried oregano, and dried sweet basil leaves. Continue to sauté for an additional 5 minutes to allow the flavors to meld.
  4. Pour in the dry white wine to deglaze the pan, scraping up any browned bits from the bottom.
  5. Add hot chicken stock to the pot, enough to cover the vegetables, and let it simmer until reduced by one-third.
  6. Stir in Worcestershire sauce, Tabasco sauce, smoked chicken (see instructions below), black beans, and broccoli florets. Simmer for another 5 minutes to allow the flavors to combine.
  7. Pour in the heavy cream and simmer for an additional 5 minutes, stirring occasionally.
  8. Season the soup to taste and thicken with cornstarch if desired.
  9. Gradually add the remaining butter, piece by piece, stirring until melted and fully incorporated.
  10. Serve the black bean soup immediately, garnished with your favorite toppings if desired.

Additional Notes:

  • Smoked Chicken: To prepare the smoked chicken, preheat a covered grill with applewood chips until slightly smoking. Cook boneless chicken breasts to medium-rare, about 30 minutes. Ensure the grill is not too hot to prevent overcooking.
