Instructions:
-
In a bowl, mix all the filling ingredients until well combined. Set aside while preparing the muffin mix. For easier handling, refrigerate the filling mixture while preparing the muffin batter.
-
Preheat your oven to 400ºF (200ºC). Grease 24 muffin cups or line them with paper baking cups to prevent sticking.
-
In a large mixing bowl, beat together the pumpkin, brown sugar, milk, oil, and eggs until smooth and creamy.
-
Gradually stir in the remaining dry ingredients, including all-purpose flour, sugar, baking powder, cinnamon, salt, and clove, mixing just until the flour is moistened.
-
Fold in the chopped pecans and raisins gently into the batter until evenly distributed.
-
Fill each muffin cup about two-thirds full with the prepared batter.
-
Prepare a piping bag with the cream cheese mixture and attach a wide tip. Insert the piping tip into the muffin batter and gently squeeze out the cream cheese mixture into each muffin.
-
Repeat the process for all 24 muffins, ensuring each one has a generous dollop of cream cheese filling.
-
Bake the muffins in the preheated oven for 20 to 22 minutes or until they turn lightly golden brown and a toothpick inserted into the center comes out clean.
-
Once baked, immediately remove the muffins from the pan and allow them to cool slightly before serving.
Enjoy the warm, aromatic flavors of pumpkin and cheesecake in every delicious bite of these Pumpkin Cheesecake Muffins! Perfect for sharing with loved ones during the holiday season or any time you’re craving a cozy treat.
