Favorite Bran Muffins Recipe 🧁
Overview:
My mum used to make these for me all the time, and I would only eat them if she put chocolate chips in them. Now I make them myself, and they are just as good without the extra sweetness! Prep time is approximate – it usually takes me a long time to butter and flour my muffin pans.

Instructions:

Prepare Muffin Tins:
- Butter and flour muffin tins. You can use leftover flour in the next step if you are feeling quite economical.

Mix Dry Ingredients:
- Sift together whole wheat flour, baking soda, salt, and cinnamon into a bowl. If using whole wheat flour, simply dump in the little flakes as they will not sift through the sieve.

Cream Butter:
- In a large bowl, cream softened butter on moderate speed for about 2 minutes or until creamy.

Add Sugar and Egg:
- Beat in brown sugar and beat for one minute, or until combined. Then blend in the egg and vanilla extract and beat for another minute.

Incorporate Wet Ingredients:
- On a lower speed, blend in sour cream and molasses, scraping down the sides of the bowl with a spatula to keep the batter even.

Combine Dry Ingredients:
- By hand, stir in the sifted dry ingredients, blending just until flour particles have been absorbed.

Fill Muffin Tins:
- Fill muffin tins 2/3 full with the batter.

Bake:
- Bake in a preheated 400°F (200°C) oven for about 13-15 minutes for medium muffins, 10 minutes for mini muffins, and 15-18 minutes for large muffins. Bake until the batter starts to pull away from the sides and a toothpick inserted into the middle comes out clean and dry.

Cool:
- Let the muffins cool in the tin for about 45 seconds, then remove them to a wire cooling rack.
