Homemade Egg Rolls Recipe

Description:

Rollie (one of the little Filipino boys I worked with) used to bring these to our potlucks. I always think of him when I make them. This is a great potluck itemβ€”perfect for Super Bowl parties or for making ahead and freezing for a quick snack to pop in the microwave. Though it takes a bit of time to make, the effort is definitely worth it!

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 egg
  • 1 tablespoon sugar
  • 1 cup water
  • Peanut oil, for greasing skillet
  • 1 pound lean ground beef
  • 1 tablespoon butter
  • 2 cups shredded cabbage
  • 1/2 cup chopped green onion
  • 1/2 cup chopped celery
  • 2 cups bean sprouts
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sugar
  • 12 egg roll wrappers

Instructions:

  1. Prepare the Batter:

    • Sift together the all-purpose flour, cornstarch, and salt into a mixing bowl.
    • Add the egg and sugar to the dry ingredients.
    • Gradually pour in the water while stirring, until you achieve a very thin batter consistency.
  2. Cook the Batter:

    • Using a pastry brush, lightly grease a 6-inch skillet with peanut oil.
    • Pour 4 tablespoons of the batter into the skillet, tilting the pan to spread the batter evenly over the entire bottom.
    • Cook over low heat until the edges start to peel away from the sides of the pan.
    • Gently turn the cooked batter and cook the other side.
    • Remove from the pan and allow to cool.
  3. Prepare the Filling:

    • In a separate skillet, brown the lean ground beef in butter over medium heat.
    • Add the shredded cabbage, chopped green onion, chopped celery, and bean sprouts to the cooked ground beef.
    • Season with salt, pepper, and sugar.
    • Cook the mixture for about 5 minutes, until the vegetables are tender.
    • Drain any excess liquid and allow the filling to cool.
  4. Assemble and Fry the Egg Rolls:

    • Place a heaping tablespoon of the cooled filling in the center of each egg roll wrapper.
    • Spread the filling evenly, leaving about 1/2-inch space from the edges.
    • Fold up the sides of the wrapper and roll tightly, sealing the edges with a mixture of 1 tablespoon flour and 2 tablespoons water.
    • Heat the deep frying oil to 360Β°F (182Β°C).
    • Carefully fry the assembled egg rolls in the hot oil until they turn golden brown.
    • Remove from the oil and drain on paper towels to remove excess oil.
  5. Serve:

    • Homemade egg rolls are best served hot and crispy.
    • Enjoy them with your favorite dipping sauce such as sweet hot mustard, sweet and sour sauce, Worcestershire sauce, or any sauce of your choice.
