4 tbsp Fresh lemon juice

2 tsp Kosher salt
1 tsp Freshly ground black pepper
1 Red onion, finely chopped
4 Scallions, thinly sliced

Instructions:

  1. Marinating the Chicken:

    • Place the chicken wings in a large Ziploc plastic bag.
    • In a mixing bowl, whisk together the minced garlic, melted butter, extra virgin olive oil, Dijon mustard, fresh lemon juice, Worcestershire sauce, chili powder, sweet paprika, kosher salt, and freshly ground black pepper until thoroughly combined.
    • Pour the marinade over the chicken wings in the plastic bag.
    • Squeeze out the air from the bag, seal it, and then turn and knead the bag until the chicken wings are evenly coated with the marinade.
    • Refrigerate the bag overnight, turning and kneading the chicken wings several times to ensure they marinate evenly.
  2. Baking the Wings:

    • Preheat the oven to 375ยฐF (190ยฐC) and prepare two baking sheets by spraying them with nonstick spray.
    • Divide the marinated chicken wings and excess marinade evenly between the prepared baking sheets.
    • Bake the wings in the preheated oven for 30 minutes, turning and basting them halfway through the cooking time and switching the positions of the baking sheets to ensure even cooking.
    • After 30 minutes, reduce the oven temperature to 350ยฐF (175ยฐC).
    • Turn and baste the chicken wings once again, then continue baking for another 30 minutes or until the wings are cooked through and golden brown, turning, basting, and switching the pans halfway through the cooking time to ensure even cooking.
  3. Serving:

    • Once cooked, transfer the wings to a serving dish.
    • Pour any remaining sauce from the baking sheets over the wings and scrape off any flavorful bits.
    • Garnish with chopped scallions and serve the deviled chicken wings hot, alongside your favorite dipping sauces or sides.
