Sauce:
- 2 tbsp Light soy sauce
- 2 tbsp Sake
- 2 tbsp Dry sherry
- 1 tbsp Cornstarch
Instructions:

Prepare Chicken:
- In a bowl, whisk together the egg and 2 tablespoons of cornstarch until well combined.
- Add the chicken thighs to the mixture, coating them thoroughly. Let it stand for 10-15 minutes to marinate.

Prepare Sauce:
- In a small bowl, mix together the light soy sauce, sake, dry sherry, and cornstarch. Set aside.

Prepare Orange:
- Cut the orange in half, then quarter it, and halve again. Remove the peel, trying to keep it intact. Remove as much white pith as possible. Set aside.

Fry Chicken:
- Heat about 4 cups of peanut oil in a wok to 350ยฐF (175ยฐC).
- Place some cornstarch in a small bowl. Individually coat each marinated chicken piece with cornstarch, shaking off any excess.
- Fry the chicken pieces in the hot oil for 1 1/2 to 2 minutes or until lightly browned and crispy. Remove and drain on paper towels.

- Discard the oil from the wok. Add 1 1/2 to 2 tablespoons of peanut oil.
- Add the orange peel, red chili peppers, and minced garlic to the wok. Cook until fragrant and the peppers start to darken.
