Mexican Wedding Cakes Recipe

Description:
The holidays wouldn’t be the same without these little “snowball cookies”. Very simple to make, and popular in the cookie tins.
Ingredients:
- 1/2 cup powdered sugar
- 1 cup butter
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 cup almonds, finely chopped
Instructions:

1. | Preheat oven to 325°F (165°C). |
2. | Mix together 1/2 cup powdered sugar, butter, and vanilla. Beat until fluffy. |
3. | In a separate bowl, mix flour with salt. Gradually add flour mixture to the butter mixture, stirring until a nice dough forms. |
4. | Fold in the chopped almonds until evenly distributed in the dough. |
5. | Shape the dough into 1-inch balls and place them on an ungreased cookie sheet about 1 inch apart. |
6. | Bake in the preheated oven for about 15-18 minutes, or until set. Be careful not to let them brown. |
7. | Remove from the oven and let the cookies cool on the cookie sheets for 1 minute. |
8. | Roll the warm cookies in powdered sugar until evenly coated. |
9. | Allow the cookies to cool for 10-15 minutes. The sugar coating may become damp as they cool. |
10. | Once cooled, reroll the cookies in powdered sugar for a second coat. |
Cooking Tip:
