Description:

This heartwarming Chicken Soup recipe, lovingly passed down through generations from my grandmother Anna Buhal’tsev Bell Mersky and perfected by my mother Sandy, is the epitome of comfort food. Bursting with flavors and wholesome ingredients, it’s hailed as the ultimate Jewish Penicillin. Trust me, it’s truly exceptional!

Ingredients:

  • 1 whole chicken
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 sweet potatoes, peeled and quartered
  • 4 onions, quartered
  • 2 parsnips, chopped
  • 1-2 soup greens (anise tops)
  • Seasonings to taste: salt, pepper, garlic granules
  • Pot stickers or matzo balls for serving

Instructions:

  1. Prepare Chicken: Do not cut up the chicken. Place the whole chicken in a very large pot.

  2. Boil Chicken: Cover the chicken with water. Place the pot on high heat and bring it to a boil. Let it cook for 5 minutes.

  3. Remove Scum: Remove the pot from heat and skim off any scum that rises to the top.

  4. Add Vegetables: Slice the carrots and celery into pieces about 1/4 inch thick and add them to the pot. Quarter the onions and add them along with the quartered sweet potatoes and chopped parsnips. Place the soup greens (anise tops) into the pot, discarding the actual anise root.

  5. Simmer: Place the pot back on the burner over medium-low heat. Slightly season with salt, pepper, and garlic granules to taste. Cover and simmer until the vegetables are tender and the chicken is cooked, almost falling off the bone.

  6. Debone Chicken: Remove the chicken from the pot and carefully separate all the meat from the carcass. Discard the carcass and return the chicken pieces back to the pot.

  7. Season to Taste: Taste the soup and adjust the seasoning with more salt, pepper, and garlic granules if needed.

  8. Add Dumplings: Optionally, separately boil the pot stickers or prepare matzo balls according to the instructions on the box. Add them to the soup just before serving.

Serving:

  • Ladle the piping hot Chicken Soup into bowls, ensuring each serving has a generous portion of tender chicken, flavorful vegetables, and dumplings.
  • Garnish with freshly chopped parsley or dill for an extra burst of flavor and freshness.
