Savory Turkey Gravy With Mushrooms and Onions πŸ—πŸ„

Overview:

Rich and savory, this turkey gravy with mushrooms and onions is the ultimate comfort addition to your Thanksgiving spread or any poultry-centric meal. With the option to omit mushrooms and onions for a more traditional take, and the flexibility to substitute giblet stock with chicken stock, this recipe is versatile and sure to please any crowd.

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: 8 cups

Ingredients:

Quantity Ingredient
4 Butter
2 Onions
1/2 Mushroom
4 cups Turkey broth
1 cup Port wine
1/4 cup All-purpose flour
1/2 cup Water
2 sprigs Fresh rosemary
3/4 tsp Salt
1/4 tsp Fresh ground black pepper

Instructions:

  1. Make Giblet Stock:

    • Prepare giblet stock while the turkey is roasting. (Refer to Giblet Stock recipe #77787).
  2. Prepare Gravy Base:

    • Transfer the roasted turkey to a large platter once done.
    • Pour the juices from the pan into a fat separator and set aside to separate, approximately 10 minutes.
    • Strain the prepared stock, discarding any solids, and return it to the saucepan. Warm over low heat to keep it ready.
  3. Saute Onions and Mushrooms:

    • Place the roasting pan on the stovetop over medium-high heat.
    • Saute onions and mushrooms in butter in the roasting pan until the onions brown slightly.
  4. Deglaze Pan:

    • Pour the port wine into the pan and deglaze it, ensuring to scrape the bottom and sides with a wooden spoon to dislodge any cooked-on bits.
  5. Prepare Slurry:

    • In a small bowl, dissolve flour in water to create a slurry.
  6. Combine Ingredients:

    • Slowly pour the slurry into the roasting pan, stirring continuously to incorporate it.
    • Gradually stir in the remaining turkey broth.
  7. Enhance Flavor:

    • Raise the heat to medium-high and continue stirring consistently.
    • Add the dark drippings that have settled at the bottom of the fat separator to the roasting pan. Discard any excess fat.
    • Stir in fresh rosemary sprigs to infuse the gravy with aromatic flavors.
  8. Season and Thicken:

    • Season the gravy with salt and pepper, adjusting according to taste preferences.
    • Allow the gravy to cook for 10 to 15 minutes, stirring occasionally, until it reduces and reaches the desired thickness.
  9. Final Touches:

    • Before serving, taste the gravy and adjust the seasoning if necessary.

Serving Suggestions:

  • Serve this savory turkey gravy with mushrooms and onions alongside roasted turkey, mashed potatoes, stuffing, or any of your favorite Thanksgiving sides.
  • Drizzle generously over sliced turkey or mashed potatoes for a comforting and indulgent meal experience.

Notes:

  • This recipe yields approximately 8 cups of flavorful turkey gravy, perfect for serving a crowd or for leftovers.
  • Customize the gravy by adjusting the seasonings or incorporating additional herbs and spices to suit your taste preferences.
  • For a vegetarian option, you can substitute the turkey broth with vegetable broth and omit the giblet stock.
  • Store any leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for longer-term storage. Reheat gently on the stovetop or in the microwave before serving.
