Instructions:

  1. Prepare Bacon: Place bacon strips on a frying pan over low heat, covering the pan. Ensure bacon is only partially done, not fully cooked. When soft, remove and place strips onto a paper towel to slightly cool.

  2. Prepare Liver Mixture: In another frying pan over medium heat, melt butter or margarine. Add soy sauce, ginger, sherry, and garlic. Place chicken livers in the pan and cook until both sides are done. Once done, set aside onto a paper towel to slightly cool.

  3. Prepare Rumaki: Slice the chicken livers into somewhat flat pieces. Take a piece of chicken liver and a slice of water chestnut, then wrap either 1/2 strip or a whole strip of bacon around them, securing it with a wooden toothpick. Continue this procedure until all livers and bacon are used.

  4. Preheat Oven: About 20 minutes before serving, preheat the oven to 450°F (230°C).

  5. Bake Rumaki: About 15 minutes before serving, place the cookie sheet with the Rumaki into the preheated oven for 10 minutes. Then, raise the oven temperature to broil and broil for about 3 to 5 minutes until crispy.

  6. Serve: Remove from the oven and serve the Rumaki on a hot plate, leaving the toothpicks in place for easy handling.
