Description:

Indulge in this scrumptious quick chicken dish, a creation born out of an abundance of ginger and a jar of tantalizing pineapple salsa. Jenn’s Favorite Chicken combines the succulence of tender chicken breast with the tropical allure of pineapple, creating a harmonious blend of flavors that will leave your taste buds dancing with delight!

Ingredients:

Quantity Ingredient
4 Chicken breast halves
8 Pineapple salsa
2 cups Chicken broth
1/4 cup Flour
1/8 cup Olive oil
1/2 tsp Fresh ground white pepper
1/2 tsp Ground ginger
1/4 tsp Salt

Instructions:

  1. Prepare Chicken: Place each chicken breast half between two sheets of plastic wrap or in a plastic freezer bag, then pound them until they reach about 1/4 inch thickness. Sprinkle a little water on the chicken or plastic wrap to prevent tearing.

  2. Prepare Coating: In a shallow dish, mix together the flour, fresh ground white pepper, ground ginger, and salt.

  3. Coat Chicken: Dredge each chicken breast in the flour mixture until evenly coated.

  4. Cook Chicken: Heat olive oil in a sautรฉ pan over medium heat. Cook each chicken breast for about 3 minutes per side, or until the meat feels firm. Keep cooked chicken warm in a covered dish while preparing the sauce.

  5. Prepare Sauce: Slowly add chicken broth to the pan, being cautious of the steam. Deglaze the pan by gently scraping up any browned bits, then let the liquid simmer for about 5 minutes until slightly reduced. Stir in the pineapple salsa until you achieve a thick sauce with a lovely brownish color.

  6. Combine Chicken and Sauce: Return the pre-cooked chicken breasts to the pan, reducing the heat to medium-low. Turn the chicken once after 2 minutes and cook for an additional 2 minutes.

  7. Serve: Remove the chicken from the pan and serve each breast with 2-3 tablespoons of the flavorful sauce drizzled over the top.

Enjoy!
