Spinach Cheese Kugel (Low Fat)

Description:
Passover is usually holiday where we tend to eat nonstop. At least with this kugel, I don’t feel so guilty.
Ingredients:

2 | frozen chopped spinach |
1 | yogurt |
2 | low-fat cottage cheese |
4 | eggs |
1 | matzo meal (reserved 1/2 cup) |
1 | salt |
1/2 | nutmeg |
1/8 | pepper |
1 1/2 | lemon juice |
Instructions:
- Defrost spinach.
- Add yogurt and low-fat cottage cheese, stir well.
- Add eggs, matzo meal (reserving 1/2 cup), salt, nutmeg, pepper, and lemon juice. Mix until well combined.
- Spread the mixture in a greased 9″ x 13″ pan.
- Sprinkle the reserved 1/2 cup of matzo meal over the top.
- Cover the pan and bake at 375ยฐF (190ยฐC) for 35 minutes.
- Uncover and bake for an additional 10 minutes, or until the top is golden brown.
- Serve hot and enjoy!
