1/2 tsp Ground turmeric
1/2 tsp Chili powder
1/2 tsp Salt
1/4 cup Water

Instructions:

  1. Wash Spinach: Begin by washing the fresh spinach thoroughly in several changes of water to remove any grit or impurities. Drain well.

  2. Prepare Skillet: Heat the ghee and peanut oil in a large skillet or wok over medium heat until hot and shimmering.

  3. Sauté Onions: Add the sliced onions to the skillet and stir-fry until they turn golden brown and caramelized, about 3-4 minutes.

  4. Add Aromatics: Stir in the minced garlic and grated ginger, and continue to stir-fry for another 1-2 minutes until fragrant.

  5. Spice it Up: Sprinkle in the cumin seeds, ground cumin, ground coriander, ground turmeric, chili powder, and salt. Mix well to combine with the onions and aromatics.

  6. Incorporate Spinach: Carefully add the washed spinach to the skillet. Use tongs or a spatula to toss the spinach with the onion-spice mixture until it begins to wilt.

  7. Cook Spinach: Reduce the heat to low and let the spinach cook uncovered, stirring frequently, until it’s fully wilted and cooked through, about 3-5 minutes.

  8. Adjust Consistency: If the spinach starts sticking to the pan, add a little water, about 1/4 cup at a time, to create steam and prevent sticking.
