Ingredients:

Quantity Ingredient
4 unsalted butter
5 flour
1 icing sugar
4 oranges
4 eggs
4 unsalted butter
10 caster sugar

Instructions:

To Make the Pastry:

  1. If you have a food processor, add all the ingredients for the pastry into the bowl and process until the mixture resembles fine breadcrumbs.
  2. Alternatively, if making the pastry by hand, combine the flour and icing sugar in a bowl.
  3. Rub in the unsalted butter with your fingertips until you achieve a crumb-like mixture.
  4. Press the mixture evenly around the sides and bottom of an 8-inch flan dish.
  5. Refrigerate the flan dish for at least half an hour.
  6. Preheat the oven to 350°F/180°C/Gas Mark 4.
  7. Bake the pastry in the preheated oven for about 20 minutes or until golden brown.

To Make the Filling:

  1. Place the orange rinds in a large bowl.
  2. In a separate jug, beat the eggs thoroughly.
  3. Add the unsalted butter and caster sugar to the orange rinds, then sieve in the beaten eggs.
  4. Mix all the ingredients together and rest the bowl over a saucepan of simmering water.
  5. Stir continuously until the butter has melted and the sugar is dissolved. Remove the bowl from the heat.
  6. Stir the orange juice into the buttery mixture. Do not add the juice along with the rind at the previous stage.
  7. Pour the mixture of butter, sugar, eggs, orange rind, and juice into the baked flan case.
  8. Carefully place the flan back in the oven and bake at 350°F/180°C/Gas Mark 4 for fifteen minutes or until the filling is just set to touch.
  9. Remove from the oven and serve either warm or cool.
